If you are feeling as fall-festive as I am, you may really enjoy this post. In advance of any pumpkin carving festivities, I had to make sure I was prepared with a great pumpkin seed recipe. You can’t let all of those seeds go to waste after all! I found not one, but two variations I had to try!

Sweet & Spicy Pumpkin Seeds
1 egg white
1/4 cup natural cane sugar
1/2 teaspoon cayenne pepper
scant 1/2 teaspoon fine grained sea salt
1 cup fresh pumpkin seeds
Preheat oven to 375.
In a medium-sized bowl whisk together the egg white, sugar, cayenne and salt.
Add the pumpkin seeds and toss well. Strain the excess egg white and place seeds in a single layer across a baking sheet.
Bake for about 12 minutes or until seeds are golden.
Sprinkle with a bit more sugar and cayenne pepper and salt to taste!
Cinnamon-Sugar Roasted Pumpkin Seeds
1 1/2 cups pumpkin seeds
2 tablespoons olive oil
2 tablespoon granulated sugar
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon salt
Preheat oven to 350°F.
In a bowl, toss to coat the seeds with olive oil. Add sugar, salt, cinnamon and nutmeg.
Spread seeds in an even layer on a greased baking sheet.
Bake for 30 minutes and stir while baking for the perfect golden brown seeds!
